Abstract
The experiment of the acid protease and alkaline protease hydrolyzed wheat protein, using different hydrolysis time, hydrolysis temperature, to give the optimal hydrolysis time of alkaline protease 4.5 h, reaction temperature was 50 ℃; then the optimal degree of hydrolysis in the determination of free amino acids, and compared to study changes in protein flavor by changing the amount of free amino acids.
