Abstract

The aroma constituents and contents presented in five cultivars of tree peony during different flowering stages were analyzed by head solid-phase micro-extraction(HS-SPME) and gas chromatography-mass spectrometry(GC-MS).Differences in compounds and relative contents were observed among three stages and 5 cultivars.Relative contents of alcohol and hydrocarbon during were high in buds, with main aroma compounds(Z)-3-hexen-1-ol and 1-hexanol.During the full blooming stage, the main compounds were alcohols and terpenes, and relative contents of ester and benzenes also increased, represented by 3,7-dimethyl-6-octen-1-ol,(E)-3,7-dimethyl-2,6-octadien-1-ol and 1,3,5-trimethoxy-benzene.While in the late stage of flowering, the components were mainly alcohols, terpenes and esters, with the decrease of benzenes and the increase of esters, represented by(Z)-3-hexen-1-ol,3,7-dimethyl-6-octen-1-ol and α-farnesene.According to analysis of similarity level of aroma pattern,we found that the level of similarity both in three stages and cultivars were very low, leading to the differences in fragrances.
