Open publisher page 1 citations

Abstract

The aqueous enzymatic process of peanut protein from peanut was introduced in this paper. The cellulase was adopted. The optimum process conditions with cellulose were as followalkaline extraction of pH 8.5,temperature 45℃,amount of enzyme added 0.2g/L,enzyme reaction time 120min,acid precipitation of pH4.5. On these conditions, the product yield of peanut protein reached 69.59%,the content of peanut protein was 91.88%.
