Abstract
Wheat Glutenin subunits are important composements of seed storage proteins. The types and structures of wheat glutenin subunits are highly correlative with wheat quality. This paper reviewed the types and structures of wheat glutenin submits, including the effect of HMW-GS and LMW-GS on wheat quality. It would help to have more understanding on the relationship of wheat quality and glutenin subunits. Genetic transformation can change the structure of glutenin subunit and improve the quality of wheat.
