Abstract
Study on effect of mechanical activation pretreatment on physicochemical properties of cassava starch oxidation products.Cassava starch was activated mechanically with a stirring-type ball mill.Using H2O2 as oxidant and CuSO4 as catalyst,the oxidized starch was prepared by dry method with different activated times.The properties(solubility,apparent viscosity,diaphaneity,freeze-thaw stabilization,retrogradation) of the oxidized cassava starch produced of different activated times were studied.Experimental results showed that mechanical activation pretreatment obviously influenced the properties of the oxidized starch,with activation time prolonged,the solubility and diaphaneity of oxidized starch increased,the apparent viscosity and freeze-thaw stabilization of oxidized starch reduced,and its retrogradation was enhanced.
