Abstract
The extraction of papain in polyethylene glycol(PEG)/(NH4)2SO4 aqueous two-phase system was investigated.The effects of different molecular weight on the papain activity,and concentration of PEG or(NH4)2SO4,pH and temperature on papain partition coefficient K were studied.The results showed that the optimal aqueous two-phase system for papain extraction was 27% PEG600,21%(NH4)2SO4 at pH7.0,and 60℃.Under above conditions,the partition coefficient K of papain reached 9.28.
