Abstract
The optimization extraction process of polyphenols in mulberry dregs with ethanol-water was studied by ultrasonic assisted extraction.Some factors influenced polyphenols extraction such as the ethanol concentration,the material-liquid ratio,the amplitude,the ultrasonic time.The results showed that the optimum conditions as follows:the material-liquid ratio was 1:70,the ultrasonic time was 160s,the ethanol concentration was 60%,amplitude was 90%.The extraction rate of mulberry dregs total polyphenols could get 73.3284mg/g.
