Abstract
The enzyme systems of Aspergillus niger strains which have high inulinase activity were studied and analysed. The results show that the three strains could produce inulinase, proteinase, pectinase, amylase and cellulase, and the mutant strain A.niger Uγ-2 also had obviously amylase and pectinase activities and mutation prolong the production of cellulase. Compared with its initial strain A.niger M89, the mutant strain A. niger Uγ-2 showed not only higher inulinase but also amlyase and pectinase activities than its initial strain A.niger M89.
