Abstract
The chestnut shell was extracted with water and a pigment noted as CSPⅡ was obtained. The scavenging effects on hydroxyl radical and superoxide anion radical of the pigment extracted with water from chestnut shell were studied by UV-Visible spectroscopy. The hydroxyl radicals and superoxide anion radical were produced respectively by Fenton reaction and pyrogallol antioxidation system. The results showed that CSPⅡ had the scavenging activity to hydroxyl radical, in a concentration-dependent manner. The scavenging capacity to hydroxyl radical was represented by the concentration scavenging 50% of all of radicals, which of CSPⅡ83.19 mg/L. CSPⅡ had no remarkable scavenging activity to superoxide anion radical.
