Abstract
The volatile components of hops were extracted and analyzed by solid phase microextraction-gas chromatography-mass spectrometry method(SPME-GC-MS).The effects of different SPME fibers, extraction times and extraction temperatures on the peak areas of obtained components were investigated,The results showed that the optimal SPME extraction parameters were: polydimethylsiloxane(PDMS) fiber, extraction time 20 min and extraction temperature 60℃,by which 44 volatile components were identified, including 12 hydrocarbons and 32 oxygen-containing organic compounds. In hydrocarbons, there were 31.738% α-caryophyllene and 18.207% α-pinene.The content of hexenyl butyrate was relatively high in oxygen-containing organic compounds as 7.200%.
