Abstract

Sweet protein thanmatin is a noncaloric sweetener that has many advantages such as high sweetness intensity,low calories,no toxicity and nice sweet taste.The review is given about the structure,quality and possible sweet mechanism of sweet protein thaumatin.The development and application of sweet protein thaumatin will have broad prospect in the aspects of foodstuff industry and plant reformation.
