Abstract

The soluble dietary fiber(SDF) was made by using the residues of sweet potato as raw material.The insoluble dietary fiber was converted to SDF by treatment with twin-screw extruder.The optimal processing parameters were established as follows: water content of material 18.75%;extrusion temperature 159.7 ℃;speed of screw 91 r/min.Under above-mentioned conditions,the SDF content in the treated material was 9.64%,which was 6.3 percent higher than that in the untreated material.
