Abstract
Objective: To assay and analyze the contents of the major nutritional components of Abelmoschus sagittifolius,105 ℃ ambient pressure constant weight method,micro Kjeldahl method,Hitachi L-8800 Amino Acid Analyzer,Soxhlet extraction method,gas chromatography,3,5-dinitrosalicylic acid(DNS),anthrone-sulfuric acid colorimetry,gravimetric method,and atomic absorption spectrometer were used.The moisture content was(14.97±0.37)%,crude protein was(9.22±0.09)%,total amino acid content was 6.18% in hydrolysate,crude fat content was(17.57±0.11)%,saturated fatty acids accounted for 33.16% of total fatty acids,unsaturated fatty acids accounted for 42.24%,unidentified fatty acids took up 24.59% of the total,total sugar content was(55.75±0.80)%,soluble sugar content was(4.41±0.23)%,reducing sugar content was(2.08±0.06)%,the crude fiber content was(4.35±0.19)%,calcium,iron,zinc,manganese,copper,potassium and magnesium were 4.0 mg/g,0.12 mg/g,53.5 μg/g,14.0 μg/g,11.5 μg/g,3.4 mg/g and 1.3 mg/g respectively.With better nutritional structure,it has abundant mineral elements especially calcium,iron and zinc,valuable for further development and utilization.
