Flavonoid in 30 Kinds of Vegetable Sold in Beijing

Abstract

Objective To analyze the content of 5 types of flavonoid in 30 kinds of vegetable sold in Beijing.Method The content of quercetin,kaempferol,myricetin,luteolin and apigenin were determined with high-performance liquid chromatography. Vegetables were sampled from food markets in Beijing.Results Quercetin was detected in all 30 kinds of fresh vegetable,ranging from 2.1 to 85.9 mg/100 g ;myricetin was detected in 9 kinds of vegetable,apigenin in 8 kinds of vegetable and luteolin in 8 kinds of vegetable,but kaempferol was detected only in carrot and tomato. The contents of total flavonoid were higher in purple and white onion,carrot,sweet pepper and balsam pear.Conclusion The content and composition of flavonoid varied significantly in different vegetables. Quercetin is the predominant flavonoid contained in these vegetables.
