Abstract
Buckwheat is a unique crop that can be used as medicine food.Its nutritional and medicinal value were received more and more attention.In this paper,a space mutation Aspergillus niger ZM-8 was used to produce vinegar combination with dry material and yeast.The results showed that Buckwheat vinegar produced by Aspergillus niger ZM-8 as the saccharification agent had high product conversion rate and special flavor,in which the contents of 8 kinds of essential amino acids were higher compared with those of ordinary vinegar.
