Abstract
Effects of UV injuring culture in the culture on physiological properties of the yeast were studied. Glucan were extracted from the cell walls of yeast injured by UV in the culture. The extraction rate of glucan was compared by UV injuring culture yeast and normal yeast that was respectively reached 22.60% and 18.85% which was raised 19.90%. The content of glucan was 81.67% and 75.76% which was raised 29.25 % . The determined results showed that the glucan were mixture of glucan.
