Analysis of aromatic composition in the alcohol-free dry red wine of Cabernet sauvignon

Abstract

The chemical constituents of the volatile compounds of the dry red wine of Cabernet sauvignon and alcohol-free dry red wine of Cabernet sauvignon produced by molecular distillation were studied.The aromatic compounds were extracted by solvent extraction and analyzed by GC-MS.Their relative contents were determined by peak area normalization method 31 and 29 compounds from these two red wines were separated,and 28 and 27 of them were identified.These constituents represented 97.35% and 97.25% of the total peak areas.There were mainly advanced alcohols,esters,organic acids,fatty acids,ketones and other chemical groups.By compared with the aromatic compositions of the dry red wine of Cabernet sauvignon,the alcohol-free dry red wine of Cabernet sauvignon produced by molecular distillation were valued.
