Analysis of the nutritional components of zinc-rich rice

Three varieties(lines)of zinc - rich rice,northeast rice and Thai rice were used to detect the nutrient compositions(such as moisture,ashes,protein,amylose,micronutrient elements,etc). Meanwhile the difference of composition contents among three cultivars were also compared and analyzed. The results showed that the difference of major chemical composition between zinc - rich rice and northeast fragrant rice and Thai rice was not significant. As for the micronutrient elements,the zinc content of zinc - rich rice was higher than that of the northeast fragrant rice and Thai rice and was nearly twice as much. In addition,amino acid contents of zinc - rich rice were also determined. The results showed that total amino acid and essential amino acids contents of zinc - rich rice were higher than those in northeast rice and Thai rice. Therefore,zinc - rich rice had better nutritional value than the other two cultivars.
