Research progress of natural food preservatives from animal source

With the continuous improvement of living standards and growing concern on health,people put forward higher requirements on food safety. Natural food preservatives are a class of antimicrobial materials,directly extracted from plants,animals and microorganisms. Natural food preservatives have the advantage of abundant resources,strong antimicrobial activity,water-soluble,non-toxic,and wide antimicrobial spectrum are becoming a research hotspot focus in recent years. However,natural food preservatives have not been widely used yet. The natural property,antibacterial mechanism and application of the five kinds of animal antimicrobial materials were reviewed in this article,and their future development and problems encountered in use were also discussed.
