Abstract

In a certain conditions,lard,wall material and emulsifying agent was mixed,emulsified,homogenized,and then dried with spray drier to obtain powdered lard.By single factors experiment,the optimum emulsification conditions were got as follows:wall material was the mixture of soybean protein isolate,β-cyclodextrin and soluble starch,emulsifying agent was Tween 60 and monoglyceride,HLB was 6~8,dosage of emulsifying agent was 2%~3%,dosage of glutin was 1.6%~2.0%,emulsifying temperature and time was 70℃ and 20 minutes,respectively.By orthogonal experiment,the formula of 40% powdered lard was researched by reviewing the product index of solubility and agglomeration,and its optimum formula was the dosage of emulsion agent 3%,HLB 6,dosage of glutin 2.3%,and the mixture of soybean protein isolate,β-cyclodextrin and soluble starch as wall material.
