Abstract
This paper investigated the extraction process of red cabbage pigment with hydrochloric acid solution from fresh red cabbage, using the method of waterbath.The technological process was optimized. Results of single factor and orthogonal design experiments showed that the optimum technological was extracting twice at 60 ℃ for 3 hours with 0.35 mol/L hydrochloric acid solution and solid-liquid ratio of 25 mL/g.
