Abstract
The fatty acid compositions of safflower seed oil from seed of the Indian variety grown in North Dakota, U.S.A., and as Saskatoon, Sask., were determined. The oil was converted to methyl esters which were fractionated by distillation and the fractions were analyzed for component acids. The results show a higher saturated acid and lower oleic acid content than has been reported previously in the literature. Linolenic acid is present in only very small amount.
