Abstract

Pullulan is a neutral polysaccharide with a linear structure comprising repeating α-1, 6-linked maltriose molecules which extracellularly elabolated by Aureobasidium pullulans.Pullulan is dessolved readily in water to form a viscous, non-gelling, aqueous solution and used as binder, thickener and coating agent in food, pharmaceutical and other industries.Pullulan films prepared with aqueous solution are edible and oxygen impermeable.
