Abstract

パン酵母よりtrehaloseの分離方法について検討を加え新改良方法を考察しこれによつてtrehaloseを分離した.その結果パン酵母のtrehalose含量には著しい差異がある事が認められ最高14.5%(対乾物)に達する事が見られた.かくして得られたtrehaloseの結晶はmp.96.0~96.3°,比旋光度は濃度の差による影響は殆んどなく[α]20D=+179.1°(c=2)を示した.又酸に対する抵抗性はmaltoseに比較して著しく強くNH2SO4による完全なる加水分解に100°10時間を要した.又NH2SO4による80°に於ける加水分解の速度恒数はmaltoseの3.04×10-3に対しtrehaloseは5.93×10-4という差を示した.少量の試料よりするtrehaloseの定量法としては旋光度法,加水分解法いずれも適用出来る.
