Abstract
To study the effect of season on gross composition and physico-chemical characteristics of camel milk, composite samples from 10 she-camels in their third lactation period were collected throughout the year so as to collect 41,25 and 37 samples in summer, rainy and winter season, respectively. It was discerned that significantly least fat (3.62%), protein(3.017%), lactose(4.53%) and total solids (12.015%) contents were found in rainy season, whereas the winter milk had relatively higher content of these constituents. Ash content was found to be unaltered on account of season. Significantly low acidity (0.11%), Specific gravity(1.026) and viscosity(1.59 CP) values were observed for the samples collected during rainy season when compared with those collected in other two seasons. However, no change in electrical conductivity was observed from season to season. Milk produced in winter season had lowest pH(6.56) value.
