Abstract

The processing conditions for preparation of microporous tapioca starch byα-amylase and glucose amylase were studied. The results showed that the optimum conditions were as follows:ratio of enzyme dosage to dry starchof 0.5%,reaction time of 12h,temperature of 55℃,and pH of 5.0.
