Abstract
The antioxidant activities of the chicken fragrance were studied in NBT,DPPH,ABTS reaction systems.Moreover,the changes of antioxidant activity of the fragrance under specific conditions were examined.The results showed that chicken fragrance has antioxidant effects in the DPPH system.It process a certain effect on scavenging the superoxide radicals in NBT system.But the antioxidant activity of chicken fragrance was not obvious in the ABTS system.The antioxidant of the fragrance under particular conditions showed that antioxidant activity of the fragrance was increased at 100 ℃,and the increase was more significant in ABTS system.The antioxidant activity of chicken fragrance is also increased in the ABTS system.
