Inhibition of the activity of glucosyltransferase from Streptococcus mutans by glycyrrhizin

Abstract

We have previously shown that the natural sweetener glycyrrhizin (glyc) inhibits in vitro adherence of Streptococcus mutans in the presence of sucrose. In order to further examine the mechanism of adherence inhibition, extracellular glucosyltransferase of S. mutans was obtained, and its ability to produce glucans from sucrose in the presence of glyc was tested. These results indicate that glyc inhibits bacterial adherence by affecting the activity of glucosyltransferase.
