Abstract
In the european market, the pineapple (Ananas comosus L. Merr.) has always been considerated one of the more estimated and consumed tropical fruit. This study have a double aim: to determine the physico-chemical parameters related to the fruit quality when it arrives to the consumer and to do a comparative analysis of fruits from different origin that we found habitually in the market. Otherless, only through the knowledge of the defects we can act on the causes of their appearance and development. In this work the physico-chemical characteristics of the fruits have been determinated, and we can detect differences betwen pineapples depending on their origin: Costa Rica and Ivory Coast. Moreover, we have determined the maturity degree of the fruit in the market and the more usual defects that causes losses in the fruit quality, being the internal browning («chilling injury») the more important in this study.
