Abstract

In this study,a novel technology, ultrahigh pressure extraction, was employed to distill the polyphenol from peanut shell.By using this technology, the extraction rate of peanut shell polyphenol is 7.1 mg/g.The antioxidant activity of the polyphenol was measured by companying with Vitamin C and TBHQ.The experimental results show that the ratio of scavenging activities to OH-is 65.2%,the reducing power is 0.191,the ratio of antioxidant activity by liposome model systems is 61% and the DPPH radical scavenging ratio is 55.5%,with the concentration of peanut shell polyphenol of 1 mg/mL.To Vitamin C and TBHQ,the ratio of scavenging activities to OH-is 57.3% and 37.9%,the reducing power is 0.959 and 0.396,the ratio of antioxidant activity by liposome model systems is 19.4% and 19.8% and the DPPH radical scavenging ratio is 96.1% and 94.4%,respectively.These results indicate that the peanut shell polyphenol which distilled by ultrahigh pressure extraction has a good antioxidant activity.
