Analysis of aroma components in fresh Litchi by HS-SPME-GC-MS.

Abstract

The aroma components extracted from fresh later-harvest Litchi Nuomici were analyzed by HS-SPME-GC-MS.36 Kinds of compounds were identified with their total content of 96.97%.The major constituents were alkenes(73.58%),esters(9.24%),aromatic compounds(5.69%),alcohols(3.6%),heterocyclic compounds(2.09%),nitrogen compounds(1.30%),and alkanes(0.44%),among which the main aroma components were a-Myrcene(19.41%),DL-Limonene(19.09%),1-methyl-4-(1-methylethylidene) –Cyclohexene(18.28%),1-methoxy-3,7-dimethyl-2,6-Octadiene(4.98%),1-butanol,3-methyl-,acetate(4.5%),2-Buten-1-ol,3-methyl-,acetate(4.02%),1,2,4a,5,6,8a-hexahydro -4,7-dimethyl-1-(1-methylethyl)-,(1a,4aa,8aa)-Naphthalene(3.10%),and a –Elemene(2.49%) .Compared with other kinds of Litchi,similar main components of Litchi aroma were found as alkenes,alcohols,esters and alkanes,while their composing and relative contents varied with the different kinds of Litchi.
