Abstract
Vegetable oils and fats are an important source of human nutrition. After cereals and animal products, vegetable fats are the third most important group of indispensable foods. They are high calorie foods and are important sources of vitamins. It is estimated that 1 g of glucose produced in the photosynthetic process produces 0.39 g of lipids as against 0.83 g of starch and 0.40 g of protein. 1 They are also preferred foods because they add much taste to culinary preparations.
